Pizza Roll Ups

Ingredients:

  • Pillsbury Crescent Rolls
  • Pizza Sauce
  • Cheese
  • Toppings (pepperoni, veggies, etc)

Instructions: Open the can of rolls and lay out flat, like a crust, pinching the seams together to make one sheet of dough. Spread a thin layer of pizza sauce (to make this extra kid friendly, you can use Pizza Squeeze), and smooth out with spoon or spatula. Sprinkle shredded cheese. Arrange one layer of pepperoni. Gently roll the dough into a log. Slice into pinwheels. Arrange on baking sheet lined with parchment paper. Sprinkle a little more cheese on top. Bake at 400 degrees until the cheese is melted and pinwheels are lightly browned.

Player Pasta

Ingredients:

  • Penne pasta
  • Olive oil
  • Garlic
  • Pine nuts
  • Salt
  • Basil
  • Parsley
  • Parmesan

Instructions: In a blender, combine 1/3 cup olive oil, 3 cloves chopped garlic, 2 tablespoons pine nuts and 1/2 teaspoon salt. Blend until smooth. Add 2 cups fresh basil leaves and 1/2 cup fresh Italian parsley. Blend well. Place mixture in bowl. Gently fold in parmesan cheese. Make the penne pasta and mix in pesto.

Mini Taco Salad Cups

Ingredients:

  • Corn tortillas
  • Seasoned ground beef/turkey
  • Toppings (avocado, cheese, lettuce, tomatoes, etc)

Instructions: Bake corn tortillas folded around muffin pan at 400 degrees for 5 minutes or until crispy. Brown meat with seasoning packet and add toppings! These can also be made vegetarian.

Glitter Apples

Ingredients:

  • Water
  • 16-20 tiny read cinnamon flavored candies
  • 4 medium apple wedges
  • Ice cream

Instructions: Put water in a pan, add 16 - 20 tiny red cinnamon flavored candies. Bring to a simmer. Stir until dissolved. If water evaporates, add a little more. Add 4 medium apple wedges, stir very gently, cover pan and simmer apples about 5 minutes or until apples are fork tender. Stir very gently so red gloss coats the apples. Remove pan from heat, put apple smiles in a serving dish. Sprinkle sugar (glitter) on apples and add ice cream for an easy dessert.

Sweet Potato Nachos

Ingredients:

  • Sweet potatoes
  • Toppings (black beans, corn, cheese, tomatoes, avocado, sour cream, etc).

Instructions: Cut sweet potato into 1 inch slices. Air fry or bake sweet potato rounds. If baking, heat oven to 425 and bake for 10-15 minutes, flipping rounds half way through. Add cheese and let melt before additional toppings.
