Chef Geji's Hearty Beef or Turkey Chili

2.5 lbs Ground Beef, 90/10 or Ground Turkey  Â
.5 Qt Green pepper and Yellow onion mix, chopped medium dice
¼ cup Garlic chopped
½ - ¾ cup Beef stock, prepared
2 Diced Tomatoes, 14.5 oz canÂ
2-3 cans Tomato Sauce, 15oz. can       Â
1 Chili Beans, 15oz. can                                 Â
1 Black Beans, 15oz can                                   Â
½ cup Chili Powder, to taste
½ cup Cumin, to taste
¼ cup Cilantro, chopped
Cayenne Pepper, to taste
Black pepper, to taste
Preparation Steps
Add olive oil to a large pot. Add ground beef, onions and peppers, and garlic. Mix well. Add the black pepper, chili powder, and cumin while cooking. Add the beef stock. Taste and adjust seasonings as needed. Once beef is cooked, add the drained and rinsed black beans and the chili beans. Add tomato sauce and diced tomatoes. Mix well. Allow chili to come to a boil and then bring to a simmer. Add more chili powder and cumin as needed. Add a little cayenne pepper at a time so that it's not too spicy. Simmer for about 1 hour. Taste and adjust seasonings as needed.
Chef Geji's tip: With the lean ground beef, it may not be necessary to drain the meat. If you drain the meat don't add the beef stock until afterwards. NOTE: A couple tablespoons of sugar may be necessary to smooth out the acidity of the tomato.
