Geji’s White Chicken Chili

3 (14.5 ounce) cans of Great northern beans (Undrained)
3 (14.5 ounce) cans of Chicken stock    
2 Onions (Chopped)
4 Garlic cloves (Minced)
1 Tbsp Kosher salt    
2 (4 ounce) cans of green chiles    
4 cooked, boneless white meat chicken breast (Shredded)
2 Tsp of cumin, ground
2 Tsp of oregano, dry    
1 ½ Tsp of cayenne pepper    
1 Tbsp of cilantro, fresh or dry

Preparation Steps:

Cook chicken and cool to shred. Sweat onions and garlic until translucent.

Add chicken stock. Add green chiles, cumin, and herbs. Bring to a boil.

Add cooked chicken and white beans. Cook for about 10 minutes and lower heat to simmer for about 15 minutes. Add the cayenne. Adjust seasonings as needed.

Chef's tip: Adjust the consistency with a roux slurry (cold water and cornstarch).
