Blueberry Muffins

8 oz A/P Flour

5 oz Granulated Sugar

2 tsp Baking Powder

1/4 tsp Salt (kosher)

2 Eggs

8 oz Milk, Whole

2 oz Unsalted Butter

1 tsp Vanilla Extract

3/4 Blueberries, Fresh

1 tbsp Lemon Zest


Preparation Steps

Sift the dry ingredients together.

Stir together the liquid ingredients, including the melted butter.

Stir the liquid mixture into the dry ingredients. Do not over mix. The batter should be lumpy.

Gently fold in the blueberries and the lemon zest.

Portion the batter into a greased or paper lined muffin cups.

Bake at 350 degrees until golden brown about 18 minutes. 

Slightly cool before removing from pan.


Chef's tip: A course sugar topping would go great sprinkled on top of muffins before baking!
