Marilyn Sullivan's Sausage and Peppers

2 Cups Raw White Rice
4 Cups Water
2lbs Spicy Italian Sausage
6 Tsp Olive Olive
Choice of fresh peppers, green, yellow, and red, sliced
1  sliced onion
Salt and Pepper to taste
 
1. Put rice in pot with water and boil for 18 minutes, remove rice after 18 min and let stand for 5 minuets before fluffing
 
2. Heat 4 tbsp Olive Oil in cast iron skillet
 
3. When oil is hot, add sausage and cook thoroughly, browning on all sides
 
4. When sausage is browned remove from skillet, setting aside
 
5. With skillet still on stove, add onions and peppers, saute in sausage flavors
 
6. Slice sausages into coins
 
7.  When vegetables are softened and sauteing, add back in sausage to skillet, add remaining olive oil and further  saute ingredients  together.
 
8. Once vegi's are thoroughly  cooked, add salt and pepper,  remove from heat
 
9. Serve sausage and vegi's on top of bed of white rice and VOILA!!!
